gluten free and vegan cookies and cream bundt cake!

My family celebrated my dad’s birthday yesterday, and while he had a fully glutinous, non-vegan dessert, my mom and I also wanted a sweet treat to finish the night. Enter this cake, because my mom and I are both gluten and dairy free, and mom doesn’t eggs. This cake was hit for all of the guests, including the children. It tasted like cookies and cream, and looked just as pretty! Enjoy!

INGREDIENTS

For the Cake

  • 12 Glutino chocolate vanilla cream cookies, roughly crushed
  • 2 and 3/4 cups gluten free self-raising flour*
  • 1 teaspoon baking soda
  • 1/2 cup cocoa powder, plus a little extra for dusting the pan
  • 1/2 teaspoon salt
  • 1/2 cup dairy-free butter, softened
  • 2 and 1/4 cups granulated sugar.
  • 1 cup olive oil
  • 2 large eggs, using an egg substitute
  • 2 teaspoons vanilla extract
  • 1 cup dairy-free buttermilk*

For the Glaze

  • 2 and 1/2 cups icing/powdered sugar, 312g
  • 3 tablespoons dairy-free milk
  • 1/2 teaspoon vanilla extract
  • About 4-5 Glutino chocolate vanilla cream cookies,, for topping, roughly crushed

INSTRUCTIONS

  1. Preheat the oven to 350F°. Spray a 10″ bundt pan and dust with cocoa powder, then set aside.
  2. In a large bowl, whisk together the flour, baking soda, cocoa powder, and salt. Set aside.
  3. Using a handheld or stand mixer fitted with the paddle attachment, beat the butter on high speed until smooth and creamy about 2 to 3 minutes. Add the sugar and beat on high speed until well combined about 1 to 2 minutes. Add the oil, eggs, and vanilla and beat until combined, on high for about 2 minutes.
  4. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients. Fold in the Glutino cookie chunks.
  5. Pour the batter into the prepared bundt pan and bake for 50 – 55 minutes.
  6. Let the cake cool for 20 minutes in the pan on a wire rack before removing. Leave to cool completely before frosting.

For the Glaze

  1. Whisk together the icing sugar, milk, and vanilla until smooth. Add more milk if too thick. Drizzle over the bundt cake, and sprinkle with Glutino cookie chunks.

NOTES

  • * If you can’t get hold of gluten-free self-rising flour, take 4 cupf of all purpose gluten-free flour, 2 tablespoons of baking powder, 1 teaspoon of salt and combine. Measure out 2 and 3/4 cups and store the rest in an airtight container. Proceed with the recipe as normal.
  • ** If you can’t get a hold of dairy-free buttermilk, add 1 tablespoon of vinegar to a 1 cup measuring cup and fill the cup up with dairy-free milk. Stir and let sit for 5 minutes. Add into the mixture as normal.

guide to a gluten-free dessert charcuterie board!

Charcuterie boards are my favorite thing. There is something so elegant and easy about combing meat, cheese, crackers, spreads, fruits, and more to create a fantastic meal that has a little bit of everything for everyone. My birthday was a few days ago, and I decided I wanted to combine my love of charcuterie boards with my love of all things sweet, and celebrate with a dessert charcuterie board instead of a classic cake. My best friends and I made this board and I wanted to give y’all a guide to a gluten-free dessert charcuterie board.

Bread: For the bread I would recommend brownies, cookies, cupcakes, cinnamon rolls, pretzels, graham crackers, or any of your favorite gluten-free carbs. The bread element is essential to provide a bit of savory cut to the sweetness of the board.

“Meat/cheese”: I don’t recommend putting meat or cheese on the charcuterie board. Instead use your favorite candies and other sweet treats such as marshmallows to provide the main focus of the charcuterie board.

Fruit: The fresh fruit is one of my favorite components of any charcuterie board and luckily that translates beautifully into a dessert board. Use any of your favorite fruits such as blueberries, strawberries, apples, bananas, etc. to bring a fruity taste to balance out all of the sweetness.

Spreads: The last component is the spreads. I recommend a variety of sweet spreads such as cinnamon butter, nutella, caramel, and chocolate sauce, savory spreads such as peanut butter, and fruity spreads such as jams, and jellies to really balance out the board.

What we used: For the bread component we used a leftover cinnamon roll, gluten-free pretzels, gluten-free graham crackers, and Glutino’s Chocolate Vanilla Cookies in ours. For the meat/cheese element we used we used Reese’s Peanut Butter Cups, a Hershey bar, marshmallows, and Mott’s fruit snacks. For the fresh fruit we use strawberries. For spreads, we used nutella and peanut butter.

gluten-free corpus christi cake

Corpus Christi cake is the opening day dessert at my summer camp every year. Unfortunately this year, camp was closed due to Covid-19, so I decided to make a gluten-free cake in an attempt to recreate this cake at home. It was so fun to make this and think of all the amazing memories that came with eating it every year. I hope enjoy as much as I do!

Ingredients:

  • 2 1/4 cups (281g) gluten-free all-purpose flour
  • 1 3/4 cups (300g) granulated sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup water
  • 3 large eggs
  • 1/3 cup canola oil
  • 1/2 stick unsalted butter, melted
  • 1 tablespoon ground cinnamon

Recipe:

  1. Preheat oven to 350° F
  2. Use nonstick spray to grease a 9×13 baking pan
  3. In a medium mixing bowl combine flour, salt, baking powder, and 1 1/2 cups of sugar by whisking
  4. Add water, eggs, and canola oil to the dry ingredients and whisk vigorously, about 2 minutes, or until batter is smooth
  5. Pour the batter into the pan and bake for about 30 minutes, or until a toothpick inserted in the middle comes out clean
  6. While the cake is baking, combine the remaining 1/4 cup of sugar and cinnamon into a small bowl and set aside
  7. Allow the cake to cool completely then use a fork to poke holes all over the top of the cake
  8. Pour the melted butter over the top of the cake, using a pastry brush to even out if needed
  9. Sprinkle the top of the cake liberally with the sugar-cinnamon mixture
  10. Enjoy!

hey guys!! so one thing that definitely worried me at the start of this journey was how to order at fast-food restaurants. i mean…. fries being cooked in the same oil as the breaded chicken, employees not changing gloves?? sounds like a recipe for disaster (or cross-contamination) if you ask me. so while you can’t order at all fast-food restaurants (looking at you Burger King), here are some fast-food restaurants that as long as you inform the workers that you have a gluten allergy, you should be safely able to eat at. that said, this list is not professional advice, and there is always a risk for cross-contamination at any of these restaurants. please be careful while choosing where to eat especially if you have celiacs. none of these places are guaranteed to avoid cross contamination and there is always a risk of becoming sick after eating at these restaurants. gluten free items are underlined.

wendys – wendys is one my favorite fast food restaurants. entrees include strawberry summer salad, southwest avocado chicken salad, taco salad, and apple pecan chicken salad. sides include seasoned potatoes, apple bites, and strawberries, vanilla and chocolate frosty, all forms of fries, all forms of baked potatoes, and chili.

subway – I’ve said this many times, but Subway has some of my favorite salads. Select locations offer gluten-free bread, but your best bet is one of their salads. Toppings include all meats except meatballs, teriyaki chicken strips, chicken enchilada, falafel, seafood sensation, veggie patty, and vegan patty, all cheese, all dressings/condiments, and all veggies. Soups include black bean soup, broccoli and cheddar soup, mediterranean vegetable soup, spicy chicken tortilla soup, and tomato basil. Some locations offer a gluten-free brownie.

baskin robbins – baskin robbins is my favorite fast ice cream place. ice cream flavors include cotton candy crackle, raspberry sorbet, triple mango, baseball nut, no sugar added caramel turtle truffle, cherries jubilee, chocolate almond, chocolate, chocolate chip, cotton candy, daiquiri ice, gold medal ribbon, green tea, jamoca, jamoca almond fudge, lemon custard, made with snickers bars, mango frozen yogurt, mint chocolate chip, nutty coconut, orange sherbet, peanut butter ‘n chocolate, no sugar added pineapple coconut, pralines ‘n cream, rainbow sherbet, reese’s peanut butter cup, rum raisin, vanilla, fat-free vanilla frozen yogurt, very berry strawberry, watermelon splash ice, wild ‘n reckless sherbet, world class chocolate. other sweet treats include the unicorn creature creation, the monster creature creation, the mermaid creature creation, banana royale sundae, classic banana split, reese’s peanut butter cup sundae, two-scoop sundae.

pizza hut – pizza hut is pretty lit when it comes to gluten free. they partner with Udis and have the Udis certified gluten-free crust which is stored in it’s own container on it’s own shelf in pizza hut’s fridge. in addition, the cheese, marinara sauce, and pepperoni are stored in a gluten-free designated kit. finally every gluten-free pizza is freshly baked on designated parchment paper in our ovens. in addition to these storage techniques, team members who make your gluten-free pizza wear gloves and even use a designated gluten-free pizza cutter to cut your pizza to perfection. the cheese, marinara sauce, and pepperoni are the only truly safe toppings offered as they are stored in a seperate kit.

cold stone – cold stone has many gluten-free ice cream flavors so I am just going to list them out. amaretto, banana, black cherry, blueberry, butter pecan, butterscotch pudding, candy cane, caramel chocolate cheesecake, caramel latte, cheesecake, cherry vanilla, chocolate, chocolate hazelnut, chocolate peanut butter, chocolate pudding, chocolate raspberry truffle, cinnamon, coconut, coffee, cotton candy, dark chocolate, dark chocolate peppermint, dulce de leche, french vanilla, fudge truffle, ghirardelli® chocolate, irish cream, key lime, mango, marshmallow, mint, mocha, orange dreamsicle, peach, peanut butter, peppermint mocha, pina colada, pistachio, pistachio pudding, pumpkin, pumpkin cheesecake, raspberry, reese’s peanut butter cup, rum raisin, salted caramel, salted chocolate, sea salt fudge, sea salt sweet cream, sea salt vanilla bean, strawberry, sweet cream, vanilla bean, vanilla lite no sugar added, and white chocolate. all yogurts and soberts are gluten free. topping wise – almond joy®, butterfinger®, chocolate chips, chocolate shavings, ghirardelli® caramel square, gumballs, gummy bears, heath® bar, M&M’s®, peanut M&M’s®, rainbow chocolate drops, reese’s peanut butter cup, reese’s pieces, snickers®, white chocolate chips, york® peppermint patties are gluten free candy wise. other gluten-free toppings are coconut, chocolate sprinkles, marshmallows, peanut butter, rainbow sprinkles, sugar crystals, toasted coconut, all fruits, and all nuts. sauces are caramel, cinnamon, fudge, honey, reese’s peanut butter, and rich’s on top whipped topping. the banana split decision sundae and lifestyle smoothie mix mango juice are gluten-free.

kfc – the majority of sides on KFC’s menu are gluten free such as the coleslaw, corn on the cob, green beans, mashed potatoes, potato salad, sweet kernel corn,caesar side salad, and house side salad. so in a pinch, you could eat there. dressing-wise the buttermilk dressing, ranch fat-free. creamy caesar, light italian dressing are gluten-free.

taco bell – taco bell is an good fast mexican place. the power menu bowl. black beans and rice, crunchy taco, hash brown, spicy tostada, chips and pico/guac, doritos locos taco, and seasoned rice are all gluten-free!

dunkin’ donuts – dunkins doesn’t offer gluten-free donuts, but most of their drinks are gluten-free. the coffee, coolattas, energy punches, frozen chocolates, dunkaccinos, vanilla chai, cappuccinos, hot chocolates (not oreo), teas, shakes, coffle float, and strawberry coolatta float are all gluten-free! side-wise hashbrowns and the oatmeal are gluten free but be careful, as some people with gluten sensitivities are also sensitive to oats.

dairy queen – gluten free blizzards are the cotton candy blizzard, butterfinger blizzard, m&m blizzard, chocolate candy blizzard, reese’s peanut butter blizzard, snickers blizzard, and turtle pecan cluster blizzard. shakes include banana shake, caramel shake, chocolate shake, peanut butter shake, strawberry shake, and vanilla shake. other drinks include caramel moolatte, mocha moolatte, vanilla moolatte, lemonade twisty misty slush, misty freeze, mango pineapple smoothie, strawberry banana smoothie, tripleberry smoothie, orange julius, strawberry banana julius and misty slush. the ice cream includes banana split, peanut butter parfait, caramel sundae, chocolate sundae, hot fudge sundae, peanut butter sundae, pineapple sundae, and strawberry sundae. food includes grilled chicken blt salad, side salad, doritos nachos cheese tortilla chips, fries, lays bbq chips, oven baked chips, all sauces except gravy, chili cheese fries, bacon, and country plater with bacon, eggs, hash brown, and sausage.

chick-fil-a – chick-fil-a is definitely my favorite fast food place. they have a wide range of gluten-free menu items. entrees include grilled chicken sandwich, grilled chicken deluxe sandwich, chick-fil-a grilled market salad (not including toppings such as croutons), grilled chick-fil-a nuggets, spicy southwest salad (minus the tortilla strips) and the gluten-free bun. hash browns, greek yogurt parfait, and the fruit cup make up your gluten-free breakfast items. for our sides, the iconic waffle fries, waffle potato chips and fruit cup are gluten free! go chick-fil-a!

mcdonalds – those red arches are iconic however, i wouldn’t suggest eating here for any meals. that said your safest bet is going to be the Southwest Grilled Chicken Salad, since it is prepackaged, there is a low-risk of cross-contamination. i have had this salad as a person with gluten-sensitivity with no issues. in addition, smoothies and coffee are good to go but no milkshakes as they will be cross-contaminated from any shake that contains oreos. fries are also a no-go because they are coated in a “wheat beef flavoring”.

burger king – burger king is worse than McDonald’s unfortunately. the only gluten free food option is the garden side salad, and the vanilla and chocolate shakes. in addition, when you go on the allergen list, the first popup is about how they are not responsible for cross-contamination which never makes me feel safe eating at a restaurant.


raising cane’s – don’t choose raising cane’s if it’s your turn to pick the restaurant. the only gluten-free options are the coleslaw, cane’s sauce, and beverages. not my idea of a fun meal either.

in-n-out – in-n-out is the actual bomb. with the exception of the hamburger buns, everything at in-n-out is gluten free. just tell your cashier that you have celiacs/gluten allergy and they will clean the station, change gloves, use separate utensils, and more!

einsteins bro’s bagel – einsteins! i’ve never been there but i’ve heard it’s a good morning option. obviously none of the bagels are gluten free but all the shmears, spreads, cheese, sauces, and veggie except granola are gluten-free. i don’t know what you’re going to do what that but here you go! sides include hash brown side, kettle chips, fruit cup, redskin potato salad, broccoli cheese soup, and chewy marshmallow bar. finally all drinks are gluten-free!

firehouse subs – firehouse subs is a delicious lunch place. any firehouse sub meat is gluten free, but not meatballs, and all cheeses. plus all salads are gluten-free. some locations offer a gluten-free roll. call your local firehouse to find out!

chipotle– chipotle slaps. love it, love it, love it! for chipotle order a burrito bowl, salad, or lifestyle bowl. all ingredients are gluten-free! to avoid gluten and cross-contamination avoid flour tortillas, and items containing corn may have trace amounts of gluten from the field where they were grown! in addition, they will gladly change gloves, and wipe down surfaces if asked.


starbucks – starbucks is my favorite coffee place. they have a bunch of drinks that are gluten free. americanos, all brewed coffees, cappuccinos, espresso, flat whites, hot lattes, all macchiatos, all mochas, all teas (hot and iced), hot chocolate, white hot chocolate, caramel apple spice juice, steamed apple juice, and all steamers. the gluten-free frappuccinos include smoked butterscotch, caramel ribbon crunch, espresso, caffe vanilla, coffee, caramel, mocha, java chip, white chocolate mocha, smoked butterscotch creme, caramel ribbon crunch creme, strawberry, chai creme, double chocolatly chip creme, matcha green tea creme, vanilla bean creme, and the white chocolate creme. frappuccinos have a high risk of cross contamination so i don’t recommend ordering them. all iced coffees are gluten free. iced coconut milk drinks, refreshers, juices, milks, sparkling water, and waters are gluten free. food wise egg bites, oatmeal, cocoa marshmallow bar, marshmallow bar, egg & cheese protein box without eating the crackers, cheese & fruit protein box without the crackers, prosnax boxes and trays, chicken & quioa protein bowls, prosciutto snack tray, salted almond chocolate bites, chocolate covered espresso beans, justin’s snacks, all fruits and nuts, all popcorn and chips, all meat and cheese snacks, and all bars except the jammy sammy.

dominos – dominos has a gluten free crust but according to their website there is a high risk of cross contamination, however I have had it as a gluten intolerant person and have been fine. in addition, there are barbeque chicken wings, hot chicken wings, sweet mango habanero chicken wings, all dipping sauces and all wing sauces.

vegan and gluten free chocolate bread pudding with vegan bourbon caramel sauce

try saying the title of this recipe five times fast! that’s the real challenge, not this recipe.

in honor of father’s day, I wanted to share a take on my dad’s favorite dessert, bread pudding. this was such a fun recipe to make with my mom, and my brother for my dad. the rich chocolatey custard combines perfectly with the gluten free bread. the elegance of the bourbon-caramel on top is the perfect addition.

ingredients: bread pudding

  • 10 ounces bittersweet chocolate, chopped
  • 1 1/2 cup dairy-free milk
  • 1 cup dairy-free cream
  • 6 large eggs, made with an egg replacer
  • 1/2 cup plus 2 tablespoons sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1/2 loaf sweet gluten-free bread, bread cut into 1-inch dice
  • Unsweetened dairy-free whipped cream, for serving

ingredients: bourbon caramel sauce

  • 1 cup sugar
  • 1/4 cup water
  • 1/2 tablespoon light corn syrup
  • 1/2 cup heavy dairy-free cream
  • A splash of bourbon

recipe: chocolate bread pudding

  • Butter an 8-by-11-inch glass or ceramic baking dish. Preheat oven to 325°. In a small bowl, microwave the chocolate at high power in 20-second intervals until melted, stirring between intervals.
  • In a medium saucepan, bring the milk and cream to a simmer over moderately high heat. In a large bowl, whisk the egg mixture with 1/4 cup of the sugar, the vanilla and salt. Slowly whisk the hot milk mixture into the egg mixture, then whisk in the melted chocolate.
  • Mix the bread cubes and the custard mixture in a bowl, until the cubes are evenly coated. Pour the cubes into the baking pan. Let sit for 20 minutes.
  • Sprinkle the remaining 2 tablespoons of sugar over the bread pudding. Set the baking dish in a roasting pan and fill the pan halfway with hot water. Bake the bread pudding for 50 minutes, until a knife inserted into the center comes out clean. Remove the dish from the water bath and let stand for 20 minutes. Serve the bread pudding warm or at room temperature with the Bourbon Caramel Sauce and whipped cream. enjoy!

recipe: bourbon caramel sauce

  • In a medium saucepan, bring the sugar, water and corn syrup to a boil over high heat. Cook until the sugar is dissolved, the color should be darker than peanut butter. Continue cooking, without stirring, about 1 minutes or until an amber caramel forms. Remove from the heat, and mix, so the caramel doesn’t burn and carefully stir in the cream. Let cool for 1 minute, then stir in the bourbon. Bring the mixture to a boil over moderate heat and cook, stirring, for 30 seconds. Let the caramel sauce cool slightly and serve warm or at room temperature. enjoy!

my two favorite gluten-free brunch recipes

When I have time to sit down, and enjoy a leisurely brunch, these are my two favorite recipes. When I am craving something savory, I prefer a timeless avocado toast. The richness of the fried egg, paired with the creaminess of the avocado, and the crispiness of the toast make for the perfect savory meal. Now when I want something sweet, I go for pancakes with a banana foster on top. The timeless pancakes paired with the elegance of bananas foster makes for the perfect sweet meal. Enjoy!

avocado toast ingredients:

  • 1 slice of your favorite gluten-free bread
  • 1/2 of an avocado
  • 1 egg
  • Salt (to taste)
  • Pepper (to taste)
  • Trader Joe’s Everything but the Bagel seasoning (optional)

pancakes with bananas foster ingredients:

  • 1 1/2 cup of gluten-free flour
  • 3 1/2 teaspoons of baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 5 tbsps. butter
  • 1 banana
  • 1/2 cup brown sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon

avocado toast recipe:

  • Crack an egg into a non-stick pan and let cook about 1 minute and 30 seconds on each side at medium-high. For a runny yolk, cook about 1 minute on each side, and for a firmer yolk, cook about 1 minute and 45 seconds on each side.
  • Place the fried egg to the side and let cool.
  • Mash up the avocado and combine with salt, pepper, and your favorite seasoning. I prefer to add Trader Joe’s Everything but the Bagel seasoning.
  • Toast a piece of bread. Spread the avocado on the toast, and place the egg on top of it.
  • If needed, season the egg with salt and pepper. Enjoy!

pancakes with banana foster recipe:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Pour in the milk, 3 tbsps. of butter, egg and mix.
  • Heat a non-stick pan over medium high heat. Cook the batter, about 1/4 cup for each pancake, for about 60 seconds on each side or until browned.
  • Place the pancakes to the side.
  • For the banana foster, melt 2 tbsps. of butter in a pan. Add in sugar, vanilla extract, cinnamon, and bananas and cook for about 2 minutes.
  • Spoon over the pancakes and enjoy!

the tastiest gluten-free granola

this granola will be your new favorite snack, and breakfast item. it is perfect for any occasion. my mother started making it for her breakfast, and it has quickly turned into a family tradition for us to all make granola on sunday afternoons for special occasions for the week ahead. we use this granola for everything from snacks, breakfast, to a gift for family, friends, and teachers. enjoy!

ingredients:

  • 1 cup pumpkin seeds
  • 1 cup pecans, chopped
  • 1/2 cups unsweetened shredded coconut
  • 1/2 cup coconut oil
  • 1/2 cup raw honey
  • 1/4 cup maple syrup
  • 1 cup dried cranberries
  • 1 cup banana chips
  • 1 cup gluten-free rolled oats
  • 1 tablespoon cinnamon
  • 1 teaspoon salt

  • 1. preheat oven to 300 degrees Fahrenheit.
  • 2. add all ingredients except dried cranberries to a large bowl and mix.
  • 3. cover a baking sheet with parchment paper and place granola on the sheet.
  • 4. bake for 20-25 minutes, stirring occasionally so that it doesn’t burn.
  • 5. let cool, then add in dried cranberries and mix.
  • 6. serve!
  • store in a plastic bag in the pantry.

s’mores brownies

These s’mores brownies are insane. Some of my favorite memories come from making s’mores with family and friends as a girl. One night, I wanted s’mores for dessert but I couldn’t make a fire. Enter s’mores brownies. It is the perfect combination of graham crackers both dusted on and crumbled over the brownie, gooey browned marshmallow, and chocolate from the chips and brownie. Enjoy!

ingredients: 

  • 4 large eggs
  • 1 cup sugar, sifted
  • 1 cup brown sugar, sifted
  • 10 ounces melted butter
  • 1 1/4 cups cocoa, sifted
  • 2 teaspoons vanilla extract
  • 3/4 cup gluten-free flour, sifted
  • 1/2 teaspoon kosher salt
  • 3 gluten-free graham crackers 
  • Marshmellows 
  • ½ cup chocolate chips 

recipe:

  1. Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan with 2 ounces of butter and ¼ cup of flour.
  2. In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Sift the sugars together. Add both sugars. Add butter, cocoa, vanilla extract, ½ cup of flour, and salt. Mix well. 
  3. Pour the batter into a greased and floured 8-inch square pan and bake for 35 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it’s done, remove to a rack to cool. 
  4. Place 2 graham crackers into a ziploc baggie and crumble into a fine dust using a rolling pin. 
  5. Place the graham cracker dust, and the other graham cracker, chopped up, onto the brownies along with the marshmellows and chocolate chips. 
  6. Bake for 5 minutes. 
  7. Let cool and enjoy!
